The family that runs Christakis, Michael Wallace and Sarah Wallace Rasmussen, sat down with their Chef Nick Rodriguez after Sarah’s husband Bodie Rasmussen(of the Lost Bean) presented them with the opportunity at The Flight. While Christakis(The Greek lovingly called by friends) had been a local staple for over 20 years, this was the first time they seriously considered growing this way. They were excited by this idea but wanted to make sure the same qualities that made Christakis special-great food, great staff &extraordinary service that made you feel the warmth of their Greek upbringing, would be felt at this new location. The team decided that with supportive management from the Lost Bean Flight, that it could be done. Not an exact replication, maybe a little different. Fresh, locally sourced cuisine steeped in the Southern Greek Peloponnesian tradition, but with some southern Californian spunk. Greek street food in the heart of Orange County. The little greek.
